It seems like kale is one of those of-the-moment foods that everyone wants to try to include in their daily diets for optimal health. And so you should — kale is extremely high in nutrients and you can even get two grams of protein per serving! But it can be difficult to find ways to incorporate it in your meals. One way is by including it in a smoothie (one of my favourite ways!), but there are plenty of other great recipes to try that can highlight kale as both a nutrient-dense and tasty ingredient.
Cooking Light’s article highlighting 14 Kale Recipes is a great place to start. When I was looking for kale inspiration, I went to this post and was immediately excited about trying out the recipes. I chose my six favourite recipes from the article to share with all of you, check them out!
White Bean and Sausage Ragout with Tomatoes, Kale and Zucchini
A really easy and vegetable-rich meal that can come together in just 35 minutes! Perfect to warm you up during these last few cold winter evenings.
You’re basically looking at a big bowl of health here. Chickpeas, kale, onion, carrot and Greek yogurt make for a complete meal. There is bacon in the recipe but if you are looking to do Meatless Mondays or are a vegetarian, you can definitely omit it and you will still have a high-in-protein meal.
Here’s another nutrient-dense and meatless meal! This is a unique way to serve veggies, and even if you have kids that are wary of vegetables, serving them in a different way can help them to at least try a bite. This is a great recipe that you can make-ahead and freeze, as well!
Use bone-in chicken thighs for this recipe for a budget-friendly meal. The combination of kale, garlic, fire-roasted tomatoes and red wine sounds SO delicious and is a recipe we will be trying out very soon!
Pasta with Black Kale, Caramelized Onions and Parsnips
I loooove caramelized onions, so I will try any dish that includes them in the list of ingredients. This is another meatless meal that you can easily substitute regular kale for if you are not able to find black kale. Be sure to lightly brown the parsnips to let its natural sugars emerge!
White Bean Soup with Kale and Chorizo
Soups are a favourite dish for me to have in the winter time, and they’re SO easy to pack nourishing foods into. The chorizo will give a nice smoky flavour to the soup, and you can customize this by adding in different beans & other veggies to suit your taste!
